What dessert to prepare after a raclette ?

Although raclette is a fairly hearty dish, you should have something light for dessert. If you have trouble deciding what to serve after a raclette, here are some interesting ideas for an easy dessert. Choose according to your preferences.

Apple clafoutis

This easy dessert can be served after a raclette. For 6 people, the ingredients are 3 apples, 100 g flour, 100 g caster sugar, 3 eggs, 15 cl milk, 1 sachet vanilla sugar and 1 tablespoon oil. Preheat the oven to 6°C, 180°C. Peel the apples, remove the seeds and cut them into strips. Place them in a buttered mould. In a bowl, beat the eggs and sugar, then add the flour, vanilla sugar, milk and oil. Mix well. Pour the mixture over the apples and bake for 30 minutes. Leave to cool and remove from the mould.

Light fruity dessert

Here is an easy dessert idea to prepare after a raclette. This light dessert is original and easy to make. For 4 people you need 400 ml coconut milk, 175 g sweetened condensed milk, 5 gelatine sheets, 1 vanilla pod, 1 small lime, 4 mandarins and 2 tablespoons candied mandarin peel. Soften the gelatine in cold water. Grate the lime peel and squeeze out the juice. Heat the coconut milk and sweetened condensed milk with the vanilla pod split in half, the zest and 1 tbsp of lime juice. Reserve the juice. Turn off the heat before boiling, add the softened gelatine, scrape out the vanilla seeds and leave to stand for a few minutes. Strain the mixture and pour into small individual ramekins. Leave to cool for at least 2 hours. Mix the whole mandarin segments with the lime juice and the tablespoon of candied mandarin peel. Set aside in a cool place. Pour the coulis onto the plates and decorate.
